If you want a delicious cake that you can have on its own without any icing, then this is the recipe you need. This orange cake is light, fluffy, and easy to make. And the best part, you only need five ingredients that you probably already have in your kitchen.
Even if you are not much of a baker, this recipe is a great place to start your baking adventure because it’s almost impossible to get it wrong.
To make a 7-inch cake, you will need:
- 300g self-raising flour
- 250g margarine
- 150g sugar (you can add more if you want a sweeter cake)
- 3 large eggs
- 2 medium oranges
You will also need:
- 7” baking tin
- Measuring scale
- Electric mixer
- Mixing bowls
Procedure:
- Zest and juice the oranges and keep them separately. Preheat your oven to 160oC and grease your baking tins.
- In a bowl, beat your margarine and sugar till light, fluffy, and doubled in volume (You can either do this with an electric mixer or by hand with a wooden spoon).
- Add the three eggs, one at a time, beating after each addition.
- Add your orange zest and juice; mix till combined.
- Sift the flour and gently fold it into the wet ingredients using a wooden spoon. You don’t need to overwork the batter at this point – mix till there are no visible streaks.
- Pour the batter into a greased 7-inch tin and bake for 40-45mins or until a skewer inserted into the center of the cake comes out clean.
- Place on a wire rack to cool completely and enjoy!
