INGREDIENTS:
• 1 head cauliflower, chopped (I use fan, wring it in cheese cloth after defrosting, 2-3 cups)
• 2 large eggs
- 1/2 cup shredded mozzarella cheese
• 2 TBSP fresh grated Parmesan
• 1 TBSP Italian seasoning, salt & pepper
DIRECTIONS:
• Preheat oven to 425’ F. Line a baking sheet with parchment paper
• To make the cauliflower crust, add cauliflower to the bowl of a food processor and pulse until finely ground, yielding about 2-3 cups.*
• Using cheese cloth, drain cauliflower completely, removing as much water as possible.
• Transfer cauliflower to a large bowl. Stir in eggs, mozzarella, Parmesan & Italian seasoning;
- Season with salt & pepper
• I use a round pizza pan with holes in it, line it with parchment paper, spread out crust
