Coconut rice is an easy and tasty rice dish made by cooking rice in coconut milk. Different cultures around the world have their take on this popular dish.
This recipe is my take on Nigerian coconut rice. It’s delicious, easy, and perfect for when you’re on a budget.
Ingredients
- Rice – 2 cups (preferably local rice)
- 1-liter Coconut milk
- 1 medium onion
- 6-7 scotch bonnet chillies
- 5 small tomatoes
- 2 tbsps cooking oil
- 1/2 tsp Curry powder
- 1/4 tsp nutmeg powder
- 2 Seasoning cubes
- Salt to taste
Procedure:
- Soak your rice in hot water for about 5mins. Drain and rinse thoroughly till the water runs clear. Set aside on a sieve.
- Chop your tomatoes, chilies, and onions and set them aside.
- Heat your cooking oil over medium heat. Add Curry powder, nutmeg, and onions; saute for 3-5mins.
- Add the coconut milk to the sauteed onions and cook over low heat till hot. Do not let the milk boil to prevent it from curdling.
- Once the coconut milk is hot, add your rice, chilies, seasoning cubes, and salt. Cover and cook till done. Add your chopped tomatoes, mix and turn off the heat.
