Recipe for Grilled Chicken with Peri-peri Sauce, Even More Delicious Eaten with Rice
If you’re bored of eating grilled chicken with just the same spices, try making grilled chicken with peri-peri sauce or spicy spice sauce. This dish is suitable for lunch, with warm rice and fresh vegetables. When making this recipe, the chicken must be soaked in the marinade first from two hours to a day. Other ingredients needed include red chilies, cayenne pepper, garlic, lemon juice, vinegar and salt. Ingredients: 1 chicken (cleaned)
2 tbsp cooking oil
Marinade ingredients:
15 red chilies
5 cayenne peppers
10 cloves of garlic
60 ml lemon juice
60 ml vinegar
½ tsp salt
355 ml cooking oil

Supplementary material:
3 pieces of sweet corn

How to make:

  1. Blend the marinade spices together until smooth.
  2. Split the cleaned chicken in half, but don’t cut it, make a cut on the surface of the skin. Soak the chicken in the marinade, then store it in the refrigerator for about two hours or a day.
  3. Remove the chicken from the refrigerator, place it in a heat-resistant container.
  4. Pour the spices used in the chicken marinade into a bowl to make a rub. Brush the top and bottom sides of the chicken with the marinade until evenly coated, bake in the oven at 180 degrees Celsius.
  5. Remove the chicken from the oven after 15 minutes, rub the spices again over all sides of the chicken. 6. Bake again in the oven for 15 minutes, remove the chicken from the oven, then repeat the process of rubbing the seasoning and turning the chicken four times or a total of 60 minutes.
  6. Check the doneness of the chicken using a skewer. If there is no meat attached, it means the chicken is cooked. Remove from oven.
  7. Pour the remaining oil released by the chicken when roasting into the bowl containing the sauce used to soak the chicken. This step is to make the peri-peri sauce. Serve.
