Making Vegetable broth for Diabetic Cooking

Ingredients Required

  1. 1 large onion
  2. 1 tbsp. coconut oil
  3. 2 stalks celery, including some leaves
  4. 2 large carrots
  5. 1 bunch green onions, chopped
  6. 1 table spoon. salt
  7. 2 quarts water
  8. 8 cloves garlic, minced
  9. 8 sprigs fresh parsley
  10. 6 sprigs fresh thyme
  11. 2 bay leaves

Process

1. Cut the vegetables into small chunks.
2. Heat oil in a soup pot and
3. add onion, scallions,celery, carrots, garlic, parsley, thyme, and bay leaves.

4. Cook over high heat for 8 minutes, stirring occasionally.

5. Allow it to boil and add salt

6. Lower heat and simmer, uncovered, for 30 minutes.

Note: Other ingredients to consider: broccoli stalk, celery root
